Ideal for a light lunch with a low fat dressing and wholesome salad
Ingredients
500g turkey mince.
100g pork mince.
1 tbsp tarragon, chopped.
1 onion, finely diced and fried.
Oil, to griddle. (Or BBQ)
For the Salad
2 x 400g cans mixed beans, washed.
16 cherry tomatoes, halved.
For the Dressing
150g low fat Greek yoghurt.
1 tbsp mint sauce.
Juice of 1 lemon.
To serve
4 bagels, toasted.
Sliced tomatoes, pickle, lettuce etc.
Method
1.For the burgers, mix the turkey and pork mince in a bowl with the tarragon and fried onion. Get your hands in there and mould into 4 burgers, then cover and chill for 20 minutes.
2.Brush the burgers with oil and griddle for 5 minutes each side (or put under the grill).
3.For the dressing, mix the Greek yoghurt, mint sauce and lemon juice in a bowl.
4.For the salad, add the beans and chopped tomatoes to the dressing and mix together.
5.Serve the burger on a toasted bagel with the bean salad and other salad sides.
